Kalona Organic Milk
It Simply Tastes Better
Since March of 2004, Farmers' All-Natural Creamery Milk has delivered organic, cream-top milk that stands apart in quality and taste. The milk comes largely from small, Amish / Mennonite family farms where the average daily herd is 30 cows and where most of the work is still done by hand. Many of these farms—most of which are on about 80 tillable acres—have been in the same family for 150 years and have never been touched by chemical herbicides or pesticides.
Fresh and Full of NutrientsWhat has our customers raving about our milk? The simple fact is that our Grade A milk has substantially more nutrients than conventional milk and it is much fresher when it reaches the grocery shelf. Our milk is non-homogenized (left in its natural state) and VAT pasteurized, meaning it is pasteurized at the lowest temperature (145 degrees F) that can be used and still meet pasteurization standards. VAT pasteurization heats at half the temperature of a UHT process (cooked milk) and 30 or more degrees less than the HTST method (standard fresh milk pasteurizing). What all of this means is that our milk not only tastes fresh, it is fresh. It does not have the “cooked” or “burnt” flavor found in ultra pasteurized milk. And you can be guaranteed that it won’t be sitting on the grocery shelf with a 57 day shelf life like other ultra pasteurized milk. With Kalona Organics and Farmers’ All Natural Creamery you are truly getting farm fresh milk.
So why don’t other companies use the VAT pasteurized method? Because it takes longer and costs more, but the end result is higher quality, fresher milk.

Because our milk is non-homogenized the cream naturally floats to the top and thickens. This is the true sign of milk in its natural state. What Makes Farmers’ All Natural Creamery Organic Cottage Cheese Authentic?
It’s what goes into, or should we say, doesn’t go into Farmers’ All Natural Creamery organic cottage cheese that makes it authentic. When you read most ingredient labels today for cottage cheese you see a long list of words that you can’t pronounce or have no idea what they are- guar gum, xantham gum, locust bean gum, etc. These things are added to speed the process for making cottage cheese, create uniform textures, and/or extend shelf life.

Organic vs. Traditional Milk
So what's the difference between Sassy Cow Creamery organic and traditional milk? Sassy Cow Creamery is in the unique situation of having both organic and traditional milk. Brothers James and Robert own and operate both dairy herds that supply milk to the creamery. We have 100% confidence in all of the milk we produce, organic or traditional. The bovine growth hormone (rBGH) has never been used on any of our cattle since we started to farm and will not be used in the future. So what are the differences between the two and which one should I be buying? First off, the cows are treated with the same care and compassion at both farms. The tools available for treating any health issues are different for each farm. As an organic herd, no antibiotics are administered to the cattle. In the traditional herd, if a health concern such as a swollen foot were to develop, we would use an antibiotic to cure the infection and reduce the swelling. The milk from that cow is withheld from the tank while she is being treated and then her milk is tested to be clear of any residue before her milk goes into the tank again. The greatest difference between the two herds is the acreage the feed is grown on. The feeds grown for the organic herd are grown without the use of any herbicides or commercial fertilizers. The feed grown for the traditional herd is grown on acres that are treated to kill weeds. It is easiest to understand this if you think of your lawn and how you care for it. You can choose to care for your lawn using conventional or organic practices. The same applies for the crops grown to feed our cattle. For you, the choice between traditional and organic milk comes down to your beliefs and personal preferences. Both milks are completely safe and nutritious. Recent tests conducted by Mother Earth News magazine have shown once again that eggs from chickens that range freely on pasture provide clear nutritional benefits over eggs from confinement operations. Mother Earth News collected samples from 14 pastured flocks across the country and had them tested at an accredited laboratory. The results were compared to official US Department of Agriculture data for commercial eggs. Results showed the pastured eggs contained an amazing:

Eggs from hens raised outdoors on pasture have from three to six times more vitamin D than eggs from hens raised in confinement. Pastured hens are exposed to direct sunlight, which their bodies convert to vitamin D and then pass on to the eggs. Vitamin D is best known for its role in building strong bones. New research shows that it can also enhance the immune system, improve mood, reduce blood pressure, combat cancer, and reduce the risk of some autoimmune disorders. This latest good news about eggs comes from a study just released by Mother Earth News, a magazine that plays a leading role in promoting health-enhancing, natural foods. The editors found that eating just two eggs will give you from 63-126% of the recommended daily intake of vitamin D.
Note that this benefit comes only from hens that are free to graze fresh greens, eat bugs, and bask in the sun. Most of the eggs sold in the supermarket do not meet this criterion. * Family Farms and The Oberweis Farmer’s Pledge: Our small-herd family farmers make certain commitments to Oberweis Dairy and our customers that ultimately produce the highest quality milk available. Click here to read the Oberweis Farmer’s Pledge.
* Measurable Quality: We measure somatic cell counts (SCC) and pay our farmers a substantial premium to achieve low somatic cell counts. An important measurement of the quality of raw milk, low somatic cell counts indicate a healthy cow. State laws allow 750,000 SCC/ml in raw milk. Oberweis milk can only have a maximum of 250,000 SCC/ml, and most of our producers are in the 100,000 – 150,000 range.
* No Artificial Hormones: The use of the bovine growth hormone (rBGH) is NOT permitted on Oberweis farms, just as on organic farms. Most of our farmers would never even consider using rBGH on the cows because it tends to make the cow more susceptible to infections. This is inconsistent with the great care they provide for their herds. We pay our farmers a substantial premium not to use rBGH.
* Humane Treatment of Cows: Our small-herd family farmers know their cows by name and treat them accordingly. Their farms are designed to maximize the comfort of the cows rather than the cows’ milk production. By focusing on their animals’ comfort, our farmers have happier and healthier cows that produce higher quality milk.

When Drew and Myra Goodman came to California’s Carmel Valley in 1984, they were determined young transplants from Manhattan, drawn to the natural beauty and richness of the land. Even before they turned over their first shovels full of soil, they believed strongly in doing the right thing.
